I'm not into Jazz Fusion as much but you should look into masayoshi takanaka and early Tatsuro Yamashita works

This is a jazz inspired song feat Gumi and Teto, which may be up your alley.

The only rock I can recommend that isn't painfully mainstream is King Crimson: a prog rock band; I definitely can't listen to them all the time personally.

I've nothing inspired to share regarding metal, and I don't touch jazz. If you're willing to experiment with country: Don Williams 'expressions' album
